Au Toro, rich fat tuna, dissolves on the tongue
Tuna is served in three forms, chew toro, au toro and the image above is of au toro on the right and chew toro on the left. the difference in these "categories" is the balance between fat and meat. As can be seen, au toro has the highest fat content. This may seem like an unpleasant concept but it is completely wrong to associate the taste, texture and flavour of red meat fat with this fish fat. The presence of the fat in the fish provides a melting sensation on the tongue, as you begin to chew this delightful cut of tuna the subtlety of the flavour is magically enhanced by the gentle dissipation of texture in the mouth.
